Edikang Ikong (a.k.a Edikaikong) or Pumpkin Leaves (Vegetable) Soup has its origin in the Efik/Ibibio tribe of South-South Nigeria. “Edikaikong” as it is popularly called by them is a very nutritious delicacy and is prepared using fresh Pumpkin leaves (Ugwu) and Waterleaf. It is usually garnished with rich animal protein such as Goat meat, Beef, Stockfish, smoked fish, dried fish, etc. depending on the consumer’s preference. Some people even add periwinkles which are highly nutritious seafood. Prepared with the best ingredients, Edikaikong soup always keeps the consumer coming back for more and it can be eaten alone or in combination with any carbohydrate of choice (e.g. Rice, Eba, Fufu, Pounded Yam, etc.)
