Egusi soup is a major delicacy in the South East part of Nigeria and it gains its popularity from its unique taste and flavour. It is quite appetizing and is prepared with ground melon seeds. It is sometimes called Melon soup. It is very easy to prepare and you can never go wrong with Egusi soup because it is loved both by the young and the old. The Ingredients used in preparing Egusi soup are:

- Crayfish
- Pepper
- Tomatoes (optional)
- Meat (of choice)
- Fish
- Palm oil
- Pumpkin leaf (Ugwu), Spinach or Bitter leaf
- Salt (to taste)
- Any seasoning of choice
